Roast Chicken
One the best ways I have found to cook a chicken/roast is over night using the heat left after an enjoyable evening.
Line the base of an oven dish with oven rings and place the whole chicken onto this. Flavour the chicken with herbs, spices and seasonings to taste. A half cup of liquid can be poured into dish if desired, but I have found that the juices from the chicken, if any, to be sufficient.
Cover with foil and place into oven. (My husband likes to cover chicken with bacon first) Cook overnight with door in place.Chicken may need a little browning, this can be done in a conventional oven or if using the outdoor oven again that evening put back in oven for 10 - 15 minutes, turning to brown and warm up.This method retains all the moisture in the chicken and is finger licking delicious.
Spicy Chicken RubSupplied by Mark
Take one whole chicken, cut lengthwise so chicken can lie flat this shortens the cooking time and helps with the rub.
 
  • 1 tsp cumin seeds
  • 1 tsp black peppercorns
  • 1 tsp coriander seeds
  • 1 tsp tumeric powder
  • 1½ tsp sea salt
  • 2 chillies ( size & type optional as well as seeds -depends on kick desired)
  • 1 dsp olive oil
Place all ingredients, except oil, in a mortar and pestle and grind until paste. Add oil and stir to aid the brushing process.Slash the skin off the chicken and brush with spice mix, add more oil if needed.Cover and refrigerate for at least two hours. Heat the oven as normal until hot (carbon should be burnt off inside) then remove coals so its empty. Close the oven door and allow the oven to settle for about half and hour. Place the chicken on a roasting dish uncovered and cook with door closed for an hour until cooked. This is a great recipe for something different to cook in the pizza oven. You can perhaps start with some pizza breads while the oven is hot then have the chicken as the main dish. Feta Parcels Supplied by Juergen Fold aluminium foil to form parcels. Fill the parcels with a piece of Feta (half, or quarter block) Add chopped garlic, chopped olives, Basil leaves, Olive oil, and white wine(optional). Close parcel and put into oven for about 10 minutes. You eat the feta out of the aluminium foil with baguette. Delicious.
